Ladybug Turns TWO – Part Two

After a fun midday celebration with friends, I set about planning a small moment for our little family to celebrate Ladybug once Chris returned from work.

We decided on a strawberry ladybug fruit pizza. YUM!

Poppy was so good at using her toothpick to decorate each half strawberry. We got some pretty rockin’ ladybugs!

We sang Happy Birthday again to our sweet girl. Can’t wait until her first birthday as a member of the family!

Here’s our fruit pizza recipe, which we actually didn’t follow to a T this time:

Fruit Pizza

Crust

1/4 c. butter
1/4 c. shortening
3/4 c. sugar
1 lg. egg
1/2 tsp. vanilla
1/8 tsp. salt
1 1/2 c. four
1 tsp. cream of tartar

Spray a 10-inch pizza pan with nonstick spray. Blend crust ingredients together in a large mixing bowl. Pat evenly into the pizza pan. Bake 8-10 minutes at 400 degrees.

 

Filling

8 oz. cream cheese
1/2 c. powdered sugar
unsweetened canned and drained, frozen, or fresh fruit

Spread crust with cream cheese mixture, and top with chosen fruit.

Glaze

1 c. unsweetened pineapple juice, chilled
2 T. cornstarch
1/2 c. sugar
1/2 tsp. vanilla

Combine ingredients in saucepan until smooth. Cook, stirring constantly, until thickened. Cool, and drizzle over fruit.

(We omitted the glaze for Ladybug’s birthday dessert).
